Profession system, what is it?

As the title says, I'm wondering exactly what the profession system does. 

I had my own speculations that it made you pick/mine/etc faster and gave you a little boost to the money you got from selling the product, and some guys said the same thing yesterday. However, today I checked the peach price @ market right before selling ONE (only sold one to make sure the market price didn't drop) and before the sale they were 49, and the same after. With my 'Peach picking' skill at 65 I still only received 49, so no bonus there. 

Exactly what does this do? 



PS: Yes, I've tried to look for a similar forum post but it did not find anything that contained the word 'profession'. Also tried to google it but found nothing of use. 

 
In the police it simply keeps track of our impounding and scrapping level, making you arbitrarily faster at them (although sometimes seem to make you slower)

I definitely have noticed that... sometimes it makes processing weed really fast, and after I gain a level suddenly the speed drops drastically... then I gain another level and it's fast again. 

Odd.

 
Your profession skill goes up everytime you sell your resources at the traders, the higher your level, the faster you "process" your resources. Sadly it doesn't allow you to mine faster, nor gives you an extra. :p

Oh ok.. So then I guess the apple/peach skills are useless. :|
