Yes you can, you can be Rebel-NHS Police-NHS but you cannot be police-rebel. But be mindful that have to put time into each role.

how do I take a police break?

When you have been in the police for 3 months you will be eligible for a 7 day Police Holiday. On your holiday you can do as much rebel stuff as you want as long as its within server rules.

You can go on as civilian however if you caught doing illegal things, you could be removed the police and possibly banned
